If you are looking for a great snack and/or quick breakfast check out these "nutty blueberry protein balls."
These are from the Primal Blueprint "Quick and Easy Meals" and take about 15 min start to finish.
Ingredients:
4 Dates (found in the bulk at HEB) remove pitts
1 cup walnuts
1/2 cup fresh blueberries
1/2 cup macadamia nuts
1/2 cup shredded coconut (unsweetened)
2 tbsp coconut oil
Directions:
1) Pulverize dates in food processor until paste forms (40 sec.)
2) add walnuts and macadamia cuts (35 sec)
3) drizzle coconut oil and blend
4) scrape batter into bowl and stir in blueberries and 1/4 cup shredded coconut
5) Roll into ball and roll over left over coconut.
6) Refrigerate any leftovers for a snack/breakfast later. Makes about 4 servings.
